The weather is getting colder and we are warming our hearts and our home with baked treats.

We enjoy carob so much in baked goods. We bake with the powder that comes from the dried, roasted pod of a tree in the legume family. It’s easy to digest, slightly astringent, high in fiber, gluten-free, and rich in calcium. It’s a good alternative to chocolate for those who want a caffeine-free baked good.

Try these carob brownies with a hot cup of tea to warm your soul.

CAROB BROWNIES

You will need:

  • 3/4 cup carob powder

  • 1 cup arrowroot powder

  • 1/3 cup almond flour (or garbanzo bean flour)

  • 1/4 cup coconut flour

  • 1/2 teaspoon cinnamon

  • 1/8 teaspoon stevia powder or 8 drops monk fruit extract

  • a pinch of salt

  • 1 teaspoon each: baking powder and baking soda

  • 1 cup unsweetened applesauce

  • 1/4 cup milk (cow or plant-based)

  • 2 tablespoons maple syrup

  • 2 eggs, beaten (or 1’4 cup flaxseed meal)

  • 1/4 cup olive oil

  • 2 tablespoons apple cider vinegar

Preheat oven to 350 degrees.

Oil a 9x9 glass baking dish with olive oil

Mix all ingredients together in the order listed.

Pour batter into pan and bake for 35 minutes, or until a knife inserted comes out clean.

Cool for 15 minutes before slicing.
