grain free banana bread

Hello and happy late summer transition time! Our eldest just started first grade. It is an emotional and pivotal moment for our family. We are filling our meals with hearty, grounding meats, beans, and grains as well as some sweet treats to honor the sweet flavor of late summer.

GRAIN FREE BANANA BREAD

You will need:

  • 3 ripe bananas, mashed well

  • 4 eggs

  • 2 teaspoons vanilla

  • 1/4 cup olive oil

  • 2 cups almond flour

  • 1/2 cup arrowroot flour

  • 1/2 cup chopped walnuts or pecans

  • 1 teaspoon each: baking powder and baking soda

  • 1 teaspoon cinnamon

  • 1/4 teaspoon each: nutmeg and salt

  • 1 tablespoon apple cider vinegar

Preheat oven to 350 degrees F.

Oil a loaf pan with olive oil and set aside.

Whisk bananas, oil, eggs, and vanilla together until frothy.

Add the rest of the ingredients in the order listed and mix well.

Pour into loaf pan and bake for 50 minutes.

Cool 15 to 30 minutes before diving in.
