paleo hot cross buns

These are delicious, healthy, and make a wonderful gift when they show up on a loved one’s doorstep!

PALEO HOT CROSS BUNS

You will need:

  • 1 1/2 cups almond flour

  • 1/2 cup arrowroot starch

  • 1/4 cup coconut flour

  • 1/4 cup coconut sugar (or 6 drops monk fruit extract)

  • 1/2 teaspoon salt and cinnamon

  • 1/4 teaspoon nutmeg

  • 1 teaspoon each: baking powder and baking soda

  • 1/2 cup raisins (optional)

  • 1/4 cup coconut oil, melted

  • 4 eggs, beaten (or 4 tablespoons collagen powder whisked with 1 cup hot water)

  • 1 teaspoon vanilla extract

  • Zest of 1 orange

  • Juice of 1 orange

Preheat the oven to 350 degrees and oil a 12 cup muffin tin with coconut oil (or use a silicone one with no oiling necessary).

Mix ingredients together in the order listed.

Divide batter evenly into 12 muffin tins. Score the top of each bun with a cross.

Bake for 25 minutes, or until the tops are golden brown. Enjoy!

If you would like to fill in the crosses, you can whisk coconut butter or cashew butter with lemon juice and vanilla extract to make a lovely frosting.
