pecan pie bars

Pecans are some of my favorite nuts. They are the lowest in carbohydrates of any nut yet have a lovely natural sweetness that lends itself to healthy baked goods.

I love making this recipe for loved ones because it doesn't send people on a blood sugar rollercoaster while still satisfying that hankering for something sweet.

Try this recipe and see what you think! It also happens to be grain-free, dairy-free, paleo, vegan and adaptable for ketogenic / AIP eaters as well.

PECAN PIE BARS

For the crust:

  • 1 1/2 cups almond flour

  • 1/2 teaspoon each: cinnamon and salt

  • 1/4 cup coconut oil

  • 8 drops monk fruit extract (OR 1/4 cup coconut sugar)

  • 1 egg, beaten

For the topping:

  • 1/4 cup coconut oil

  • 10-12 drops monk fruit extract (OR 1/3 cup coconut sugar)

  • 1 tsp vanilla extract

  • 2 eggs, beaten (OR 4 tablespoons flaxseed meal in 1/4 cup of hot water)

  • 1/4 cup almond flour

  • 2 cups raw pecans, roughly chopped

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon each: nutmeg and salt

Preheat oven to 350 degrees.

Mix the filling ingredients together and press into an oiled 8x8 baking dish.

Bake for 15 minutes.

In the same bowl, mix up the topping ingredients.

Take the baking dish out of the oven, spread the topping over it, and bake for 30 minutes more, or until the top is browned and crispy.

Cool for at least 15 minutes before slicing.

Makes about 12 bars.
