chicken, spinach and Artichoke soup

I love this soup because it feels both fresh and nourishing. It is rich in pre-biotic ingredients such as artichokes that stimulate bile production for healthy digestion and support the growth of beneficial gut bacteria.

CHICKEN, SPINACH AND ARTICHOKE SOUP

You will need:

  • 3 tablespoons olive oil

  • 1 yellow onion, chopped

  • 4 cloves garlic, minced

  • 1/4 cup arrowroot flour

  • 2 cups cooked chicken

  • 4 cups chicken broth

  • 1 teaspoon mustard

  • 1 tablespoon lemon juice

  • 2 packed cups spinach (fresh or frozen)

  • 1 14 ounce jar of artichoke hearts, drained and chopped

  • Sea salt and black pepper to taste

Heat a stock pot over medium heat and add the oil. Add the onion and garlic and saute for 5 minutes, stirring frequently. Add the coriander, thyme, salt and pepper.

Add the arrowroot flour and stir to coat the vegetables. Add the broth, bring to a boil, and reduce to simmer.

Once boiling and thick, lower to a simmer and stir in the chicken, mustard, and lemon juice.

Add the spinach and artichoke hearts and simmer and simmer for 5 more minutes. Enjoy!
