Here is a soup recipe that I like to have for breakfast to help my body reset and renew. It promotes healthy detoxification and supports mental clarity and sustained energy.

AVOCADO CUCUMBER SOUP

You will need:

  • 1 cucumber, diced

  • 1/2 ripe avocado

  • 2 cloves garlic

  • 1/4 cup fresh spinach leaves

  • 1/4 cup lemon juice

  • 1/3 cup fresh cilantro

  • 1/2 cup water

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon turmeric

  • 1/2 teaspoon coriander

  • 1 dash of cayenne pepper

  • 2 tablespoons olive oil

Place all ingredients in a high speed blender or food processor and blend until well emulsified. Enjoy! This makes 2 servings and keeps in the fridge for 2 days.
